the fresher the better. the best ceviche i ever had was on the beach.
still, you never know. sometimes frozen foods can work out well despite the odds.

btw in case it wasn't clear before, "leche de tigre" and "tiger's milk" is the same thing.
one in spanish, one in english.

also, onions are a key component in leche de tigre and should be marinating before the fish- one full day if you have the time. then the onions become somewhat glassy.

leche de tigre by itself is an awesome side-dish or meal enhancer.
i usually add it to my pho or ramen, and the lemony tang is a superb compliment.
