Ah I'm sad to see gbgl is pretty much gone. I liked the forums a lot though I didn't post too often. It's a shame gunbound has just gone to shit. Well here's hopin the new forums stay alive if that is going to happen anyway. Good times guys I miss the thors hammer days. I do however hope we at least keep the strategies and formulas part around because I might check em out sometime down the road.

Hmm, that guild idea is actually pretty good.

The good thing about it is that, once you guys start playing some game, you can find some members for the clan inside the game, and call them to the forums.


And BTW Shere, Rise was my guild, I set up the forums here so that some members would start posting (Tom and encrypt pretty much sums it up tho). I don't play GB anymore, so there is no need to keep that up :) if you want you can delete it.

I think people should start giving (serious) sugestions about what the name GBGL should mean from now on then...if this is really going to happen.

I finally found some light buckwheat flour so I'm going to try make soba noodles this week!
I havent tried the hand pulled noodles in awhile but I'll practice some more with it soon.

well i sort of got diverted with another recipe project i had started earlier... making "leche de tigre", which is the base for making ceviche, which is basically the peruvian version of sashimi.

anyway, yea... i'm still very interested in trying the noodles.
i was researching it a bit and found that, besides the gluten, the oily binding agent is key. there's a special word for it that i forget right now, but different people each have their own answer for it, like eggs, different kinds of oils and other stuff.

but yea, any day now i'mma try it out...

ah yes the oil makes it more "springy" and makes it a little easier to pull.
and when peopel say lye water or kansui power its just the alkaline that they are looking for so baking soda should do.

and somewhere it mentions tiger milk. I'm assuming its referring to the decoration but is that raw fish mixed with milk? how does it taste?

tiger's milk is key lime juice mixed with whatever local ingredients get thrown in.

the acid in the fruit cooks the fish (denatures the proteins).

ceviche is the only cooked dish i know of that never gets heated.

btw i made a typo thats kansui powder not "power" lol.

so this Peruvian dish must be very acidic since it relies on the acid to clear most of the bacteria and denature the protein. would the meat taste very limy and succulent? now that you showed me this I'm kinda interested since I want to expand my menu to many different cultures. got any good sites that explain the whole concept?

there are probably about 10,000 sites out there so i'm just gonna lame-out and say "google is your friend".

the meat tastes unlike sashimi (raw) and unlike cooked fish-- that is probably what makes it so interesting.
and it's not an overpowering acid taste the way one might think.

if you don't have key limes in your area you just use a mix of lemons and limes. that's what i do. about 60% lemon juice and 40% lime juice makes a nice taste IMO.
